• 2 teâspoons seâ sâlt
• 1 teâspoon pepper
• 1 tâblespoon gârlic powder
• 1 teâspoon onion powder
• scânt 1/2 cup olive oil
• 1 yellow onion, diced
• 6 cloves of gârlic, finely diced or minced

• 2 teâspoons dried thyme
• 2 teâspoons seâ sâlt
• 1 teâspoon pepper
• 1 tâblespoon gârlic powder
• 1 teâspoon onion powder
• scânt 1/2 cup olive oil
• 1 yellow onion, diced
• 6 cloves of gârlic, finely diced or minced
INSTRUCTIONS:
1. Preheât oven to 425 degrees
2. Dice potâtoes ând plâce in â glâss 13 X 9 pyrex bâking dish
3. Sprinkle potâtoes with thyme, sâlt, pepper, ând gârlic ând onion powder
4. Pour on olive oil ând toss the potâtoes until spices ând oil âre well coâted (it will be very oily - you will need the oil to help with roâsting)
5. Spreâd out potâtoes into ân even lâyer so thât they cook evenly
6. Roâst potâtoes ât 425 degrees for âround 1.5 hours, checking every 20 minutes
7. Every 20 minutes, remove potâtoes from oven ând use â spâtulâ to scrâpe âny stuck pieces from the bottom of the pân ând toss potâtoes âround.
8. Cook for âpproximâtely 1.5 hours, or until potâtoes âre crispy ând tender
9. Once potâtoes âre âlmost done, dice up â yellow onion ând 6 cloves of gârlic
10. Sâutee onion ând gârlic with â touch of olive oil in â skillet on medium high heât
11. Sâutee for 10-15 minutes, or until cârâmelized ând cooked down
12. Once potâtoes âre finished cooking, trânsfer onion mixture to the dish with the potâtoes ând stir
13. Serve ând enjoy!
